Yuletide Tumbled Tomatoes
2 pints red grape tomatoes
1 tablespoon Coastal Goods Mediterranean or Tuscan sea salt blend
6 ounces imported green olives, pitted or unpitted
Small sprigs of fresh herbs such as parsley, rosemary, thyme, or baby basil for
garnishing
Place the tomatoes in a colander and rinse under cold running water, sorting
through the tomatoes and discarding any that are not in pristine condition. Drain
most of the water from the tomatoes and leave them in the colander. Sprinkle the
Coastal Goods salt blend over the tomatoes and gently tumble to coat evenly with
the salt – letting the residual water from rinsing the tomatoes help the salt blend to
cling to the tomatoes. Gently fold in the green olives and mound the mixture into a
decorative serving bowl. Tuck sprigs of herbs in between the tomatoes and olives
and serve with toothpicks for spearing.
